Objective:  To provide East Aurora Cooperative Market customers with high quality, good tasting, safe and nutritious food for their pleasure and convenience.  Coordinate and oversee all food service operations to ensure the fulfillment of high quality product to meet all daily prepared foods department production requirements.  To develop and expand the prepared foods offering at the East Aurora Cooperative Market to increase store sales.

Status:  Full time position

Reports to:  General Manager

Supervises:  Kitchen and bakery staff, meat and cheese buyer

Customer Service

  1. Offer consistent, fair and respectful customer interactions to ensure repeat customer traffic.
  2. Ensure a high standard for customer service for all prepared foods personnel according to established customer service vision and expectations.
  3. Provide product information and educational materials to customers and staff.
  4. Ensure proper training and orientation for all prepared foods personnel through established procedures/policies.
  5. Understand and communicate the value of the co-op, and the particulars of ownership to customers and staff.  Work to advance the mission of East Aurora Cooperative Market through outstanding service. 

Ordering and Pricing

  1. In coordination with the General Manager, negotiate with food service suppliers for favorable prices, terms and quality of ingredients and prepared foods.
  2. Evaluate product and ingredient suppliers, as necessary, and investigate new sources of supply.
  3. Maintain a clear and comprehensive system for placing orders. Create and execute or oversee orders.
  4. Oversee the receipt of orders and verify invoice accuracy and product quality on all prepared foodservices. Ensure proper product rotation.
  5. Process invoices for submission to the finance department.
  6. Establish product pricing that will achieve margin goals set with the General Manager.
  7. Ensure timely and accurate price labeling of prepared foods product.  Communicate changes with prepared foods staff.

Department Operations and Safety

  1. Ensure implementation of employee safety measures for food handling and preparation, implementing the most functional and efficient methods that meet all local and federal health codes.
  2. Develop systems and ensure their implementation to maintain accurate, updated records of product cost, production, and losses.
  3. Implement and oversee systems for monthly inventory of prepared foods, bakery, meat and cheese items.
  4. In cooperation with the kitchen staff ensure kitchen equipment is maintained and properly serviced.  Advise General Manager of equipment acquisition, repair and replacement needs.
  5. Ensure adequate supply and selection of prepared foods salads, entrees, home meal replacement, hot case foods, soups, sandwiches, bakery items, coffee, fresh meats and cheeses.


  • Hire, train, schedule, and evaluate a prepared foods staff that performs at a high level of excellence. 

Merchandising and Promotions

  1. Ensure that all prepared foods products meet a high standard for quality, flavor and consistency.
  2. Ensure that all displays are fully stocked, fronted and faced, and properly rotated.  Set stocking priorities for staff on a daily basis.  Stock items as needed.
  3. Ensure proper signage for all items in each area of the prepared foods.  Request assistance from marketing department as needed for signage and display props.
  4. Plan and execute attractive, excitement-generating displays.  Coordinate promotions with other departments to create a cohesive image.
  5. Work to develop seasonal recipe options with the kitchen staff.  Create opportunities for customer feedback on recipes and regular product offerings.
  6. Continue to rotate and expand on product offering to grow sales.


  1. Participate in East Aurora Cooperative Market strategic planning sessions.
  2. Develop and manage annual departmental budget.
  3. Participate on Management Team.
  4. Perform other duties as assigned by the General Manager.


  • Minimum one (1) year experience in retail management
  • Minimum of two (2) years of experience in food service
  • Experience in commercial cooking, baking, recipe development
  • Experience in personnel management (interviewing, hiring, training, evaluation and discipline)
  • Proven ability to develop and implement budgets and to adhere to cost and margin requirements
  • Previous experience with ordering, pricing and inventory control
  • Strong organizational skills
  • Keen attention to detail

  • Ability to plan, develop, implement and assess systems for efficient and productive operations
